Lady Rebel Round - Up Tournament

UNLV and The Cox Pavilion this weekend play host to the Lady Rebel Round -Up Basketball Tournament. The other teams invited were Eastern Washington Eagles, Cal State - Fullerton Titans, and Georgia Lady Bulldogs.

Friday's game was exciting, and action packed, but in overtime the Lady Rebels fell just short, 70 - 69. This was the first loss of the season, and for Coach Olivier. This also meant the Rebels wouldn't advance to the Championship Game.

As a fan I never want to see my team lose, but that feeling is made worse when you honestly think the quality of the officiating effected the outcome of the game.

Brittany Halberg's was in my mind, clearly fouled as she attempted her last second shot to win the game in overtime. There was no call after the missed shot, so time expired.

There was some good news, the Rebels came back form being down as much as 11 points to force an overtime period. Shamela Hampton scored 31 points, a personal best. Shamela, along with Dominique Harris had double -doubles.

After the game, my children and I got a picture with former Lady Rebel, WNBA Houston Comets and' European League player, Sequoia Homes.

My children and I were at the arena as the doors opened at 10:30am on Saturday for the consolation game.

The big question now was how would the Lady Rebels' respond to their first lost, less then 24 hours ago.

The team had a very slow start, and found themselves in a 6 point hole at end for the first half, but it could have been so much worse.

The Rebels started very hot in second half, coach must have lit a fire. They went on a 11- 2 run start with a Hampton 3- pointer. The lead would change hands 5 more times. After the 10 minutes to go mark, UNLV never looked back, opening up a 12 point lead until the final seconds to take a 76 -65 win.

Shamela had her 4th double - double, and India Chaney (pictured above right) added 10 points from the bench.

Georgia won the tournament, Eastern Washington 2cd, UNLV 3rd, and Cal State Fullerton was in last or 4th place. Ashley Houts of Georgia was the tournament MVP.

After a 5 game homestead, the UNLV Lady Rebels will hit the road for 3 games vs Texas Tech, Loyola Marymount, and Oregon State.

The next time the Rebels will be in Las Vegas will be Dec 19 for The Desert Draw at UNLV Tournament with Cal State -Northridge, Oklahoma State, and Southern Miss.

Recipes: Bountiful Table

During 2002, My mom was serving at the Rockville United Methodist Church in Rockville, Connecticut. As a fund rasier for the sunday school, the church put together a cookbook.

My mom wrote a prayer/ song that appears in the book, as well as adding a few recipes from her kitchen. One of my favorites is the Jambalaya which I have added to this entry.

In the Cookbook, it says that profits will be used to purchase new audio/video equipment, and furniture for the classes.

The following recipes are from The Boutiful Table Cookbook:

Pork & Sauerkraut Supper
6 Pork Ribs, country style
2 Tablespoons Oil
1 Medium Onion, diced
1 Cup Apple Juice, divided
No 2 Sauerkraut, drained
2 Apples, diced
2 teaspoons Brown Sugar
Salt & Pepper to taste

Brown pork in oil. remove from pan. Cook onion in drippings until tender. Stir in 1/4 cup apple juice. In large covered casserole combine onion, drippings, sauerkraut, apples, sugar, and remaining apple juice. Tuck pork into sauerkraut mixture, and sprinkle with salt and pepper. Cover and bake at 350 degrees for 2 hours, basting occasionally.

Italian Beef Sandwichs
6-10 pounds, Chuck Roast
1 Cup Water
2 Packages, Au Jus Mix
2 Packages, Italian Salad (Dressing) Mix
2 Sweet Onions, sliced thin
3 Red Peppers, sliced thin
Sub or Hoagie Rolls

Cook chuck roast at 325 degrees for about 1 to 1 1/2 hours in water. When three-quarters done, cool, and slice thin. Take broth from meat and bring to a gentle boil in a saucepan, adding au jus and salad mixs. Slice peppers and oinions thin. Put beef, peppers, and onions in a crockpot, add juice. Cook at least 2 hours. Serve on buns.

Jambalaya
1 Tablespoon Olive Oil
1 Large Green Pepper, chopped
1 Medium Onion, chopped
2-4 Cloves Garlic, chopped
1 (28 ounce) can Plum Tomatoes
2 Cups Tomato Juice
1 Teaspoon Thyme
1 Bay Leaf
2 Tablespoons Chili Powder
2 Teaspoons ground Cumin
1/4 - 1/2 Teaspoon Cayenne Pepper
3 Cups cooked Brown Rice
1 - 1 1/2 pounds frozen cooked Shrimp
1/4 Cup chopped Parsley

Saute green pepper, onion, and garlic in olive oil over medium heat in a 4 - quart saucepan until vegetables are tender. Add tomatoes, tomato juice, thyme, bay leaf, chili powder, cumin, and cayenne pepper. Cover and simmer 30 minutes. About 30 minutes before serving, add cook rice, and srimp; heat until hot throughout. remove bay leaf and add parsley. Serves 6-10, depending on size of portions.

Chicken & Mushroom Dijon
6 skinless, boneless, Chicken Breasts, halves
Salt & Pepper, to taste
1/2 Cup + 1 Teaspoon unsifted Flour
1/2 teaspoon Paprika
1/3 Cup Vegetable Oil
8 ounces sliced fresh Mushrooms
3/4 Cup chopped Onion
1 Pint Half and Half
1-2 Tablespoons Dijon Mustard
2 Teaspoons chicken flavor Instant Bouillon
1 Teaspoon Basil
1 Teaspoon Thyme
1/2 Cup Red Bell Pepper
1 (16 ounce) package extra broad Egg Noodles, uncooked

Season chicken lightly with salt and pepper. In paper or plastic bag, combine 1/2 cup flour and paprika. Add chicken pieces; shake to coat lightly. In a large skillet, over medium heat, cook chicken in oil until tender. remove from skillet; drain. In drippings, cook and stir mushrooms and onions until tender; stir in 1 tablespoon of flour the half and half, mustard, bouillon, basil, and thyme. Cook and stir well until thickened. Add chicken and bell pepper; cover and simmer 15 minutes. Meanwhile, prepare noodles according to directions. drain well. Serve chicken and sauce over noodles. Serves 6.

Easy Chicken Pot Pie
1 Can Cream of Mushroom Soup
1 (16 ounces) Bag frozen mixed Vegetables
1 1/2 Cups Chicken Broth
2 Cups cooked diced Chicken
1/2 Stick Margarine
1/2 Cups Milk
1 1/2 Cups Bisquick

Mix the soup, vegetables, chicken broth, and chicken together in a bowl. Pour mixture evenly into a greased 9 x 13 inch pan. Melt margarine and add milk and bisquick. Mix well. it will be runny. Pour over chicken mixture. Bake at 350 degreses for 1 hour or until top is brown.
NOTE: Equivant amounts of canned or fresh vegetables can be substituted for frozen.

Happy Thanksgiving !!

First off let me extend a Happy Thanksgiving to all my readers. My hope is you had a great day with family and friends.

My family has a connection to the first thanksgiving feast. My father's side of the family comes through William White. He died the first winter, so he may have been at the feast with the Native Americans. He did have two sons, Resolved, and Peregrine with his wife, Susanna. She remarried Governor Edward Winslow a few months after William's passing. This was the first marriage to occur at Plymouth.

The General Society of Mayflower Descendants in its by laws does not recognize linage by adoption. So my name will not appear on an official list. I'm just proud of my father, and to know our history.

My Thanksgiving was more modern, and had the flare that only Las Vegas can add.

First of all the weather was very strange. The Last few days have been gray, cloudy, and rainy most of the time. As we are in a drought, we needed the rain badly. I do have to say that I can't remember a storm lasting this long, and leaving this much rain in my 9 years living in Las Vegas.

Ever since I was a child, a big part of this holiday celebration was watching Macy's Thanksgiving Day Parade. Even with the 3 hour time difference, it a must for me. This was the 82nd year for the parade famous for its giant balloons. Below is a collage that I got off the Internet.


We watched the parade together. We also copy it unto the DVR, so we can watch it again. I'm glad to be passing on this tradition to my children. I hope we have many years watching together as a family.
Normally Football would be part of this day, but my team, The New England Patriots weren't playing. I had little or no interest in the two games offered, so I passed on it for this year. The NFL can do much better.

We meet Grandpa Johnson at Sam's Town Hotel & Gambling Hall. We where going to have dinner at the Firelight Buffet. This is one of favorite places for celebration on the holidays. You can see a picture of sign on above right.


I had the traditional turkey with all the fixings on my first plate. Then got into the more interesting choices with pheasant, apple glazed pork chop, egg roll, black pepper chicken, toasta, taco salad, and white fish in an orange sauce.

The Firelight Buffet has an ice sculpture and a chocolate fountain to dip strawberries and / or cream puffs into. I did just that for my dessert.

Also there was free champagne, which was really an American sparkling wine, know as Asti Spumoni, and Margarita. As my ex father in law is Mormon, I was the only drinking. I did take a bit of advantage of this.

After dinner, we took a walk in Sam's Town indoor park. They have animatronic animals. My Children loved the bear, wolf, deer, chipmunk, and beaver.

They also have a daily water and laser light show. The change the graphics and music to fit the season. I didn't recognize the holiday music, it was instrumental, and I had my daughter squeals of delight as well. I was watching her as she stood on a fake rock to see the show over the people in front of her. My son was closer with his grandfather.

They also ended the show with two patriotic songs, as Sam's Town has done since September 11, 2001. Las Vegas is home to Nellis Air Force Base, so a lot of military and their families stay there when visiting. Tonight they played, Where The Stars and Stripes & Eagles Fly, and God Bless The USA.

When we got home, we got and made calls from family and close friends. The Children and I talked with my Brother Joe and his wife, My Parents, Wendy Wheeler, Rozale Johnson, Arva Johnson, Steffanie Johnson, and James Johnson.


I also got facebook to thank some friends for their kind Thanksgiving messages. I sent greetings through facebook, meet-up.com, IMs, e-mail and text message as well.

Much to Give Thanks For.....

How things can change in a year! When I was younger, a year took forever, now it just seems to fly by way to fast.

At this time last year, my ex-wife finally stop fighting and signed the finalization papers for our divorce. We were granted a divorce back in May, but for whatever reason she was holding off from signing them.

I was up visiting with my ex's family in Salt Lake City, Utah. So it a bit strange and awkward to get the call from my lawyer. I was glad that it was over, but also depressed at the loss.

Since that time, and over this last year, I have much to be thankful about. The following is kind of a highlight list:

For my family and the support they give to me. I don't know what I would do without them.

For Brandy and Aiden coming into my life.

For my friends, their advice and support.

For all my new friends from around the world via Facebook

That I got back in contact with my childhood best friend, Joanne Rahn. She is now married, and just had her second child, a girl, on Halloween.

For continued contact with one of my favorite High School teacher, John Merlo. It is fun to wind him up, but also to get advice.

For Lily and the members of Pagan & Witches Community Circle. A chance to learn and grow in my faith and craft.

For my '06 Saturn Vue AWD.

For the election of Barack Obama as President, and Dina Titus as a Congresswoman.

My Homework - Writing a Quarter Call


Part of my Magickal class or any class is homework. Were most homework seem to be a chore, I really enjoyed the challenge, and the result.

I had to write my own Quarter Call for East, and the element of Air.

"Quarter calls are designed to call only the energy you will allow in your magick circle. For all others, there is a No Trespassing sign. Nothing can come into your circle unless you, yourself, invite it, which is why there are so many different types of quarter calls that address various kinds of energy. There are calls that invoke the elements, angels, totem animals, deities of a particular pantheons, dragons, airts, winds, the dead, ancient archetypes, one's lineage, and /or the Watchtowers (stellar / Ceremonial)." ~ Silver RavenWolf.

The Wheel of the Year

" The Wheel of the Year is best known in modern Witchcraft as representing the cycle of the seasons throughout one calender year. This symbolic wheel is divided into eight parts, with each spoke of the wheel representing a particular season." ~ Silver RavenWolf.

The eight parts or high holy days of the wheel are known as Sabbats.

Depending on the pantheon or craft group you belong to or follow the names many be slightly different. Here is the list as I know it.

Ostara / Spring Equinox Mar 20-23

For readers in the Southern Hemisphere, the dates will be off for each of the Sabbats. This is because the seasons are reversed.

Sabbats along with Full and New Moons are the time that Pagans and Witches are most active. A Coven or Circle might hold classes and other events as a need or want arises.

A Solitary Witch or any member of a Coven or Circle can cast as spell as needed.

We all have our personal worship as well as patron Goddesses and Gods.

Active Winter for Boston Red Sox

This time is known as the off season for the teams of Major League Baseball. This week and winter so far has been very active for the Boston Red Sox.

Dustin Pedroia (pictured on left) was named the American League's Most Valuable Player Award (MVP). This on top of a Gold Glove, and a berth on the Silver Slugger team.

This following a 2007 season in which Pedroia helped the Red Sox to a World Series championship and won the American League's Rookie of the Year Award.

Dustin has come a long way since a very slow start that had many wondering what the Red Sox coaching staff was thinking. Management stuck with him, riding out the complaints from fans and sports commentators.

Now Pedroia is racking up the Awards, and has become a key member of the team. We wouldn't have the success we have enjoyed without him. I hope he stays in Boston for a long time to come. He is an exciting player to watch.

According to Redsox.com, "By prevailing in the Baseball Writers' Association of America voting, Pedroia became the 10th Red Sox MVP winner and the first to cart home the coveted award since Mo Vaughn in 1995. The previous winners from Boston were Jimmie Foxx ('38), Ted Williams ('46 and '49), Jackie Jensen ('58), Carl Yastrzemski ('67), Fred Lynn ('75), Jim Rice ('78) and Roger Clemens ('86). "

Also this week we said go bye to Coco Crisp in a trade for right-handed pitcher Ramon Ramirez from the Kansas City Royals.

Jacoby Ellsbury is Boston's center fielder for the present and future, Crisp was thought to be expendable

From Redsox.com,"Crisp's value as a defender and a baserunner, Epstein chose to hang on to him in 2008. It paid off, as several injuries to other members of the Red Sox -- not to mention some inconsistency by Ellsbury offensively -- enabled Crisp to have 361 at-bats.

The switch-hitter batted .283 with seven homers and 41 RBIs, stealing 20 bases."

Coco Crisp came to the Red Sox after a trade with the Indians in 2006. At the time, the hope was he would replace Johnny Damon in center field and top of the lineup.

We wish him the best of luck in Kansas City.

On the other side of the trade, Ramon Ramirez is very excited to be the newest member of the most storied team in the MLB. He will have a change to help get a World Series ring.

Ramirez will have to prove himself and that he not just hype. I have a feeling he soon with be a favorite among the Fenway faithful.

UNLV Puts Down the Wolfpack

The Lady Rebels were tested by in state rivals, UNR on Friday night, and they responded with close to perfection. Beating the Wolfpack, 66-53.

The win gives the Lady Rebels their first 3-0 start since the 2002-03 season.

For the first time the Rebels found themselves in a hole. Instead of panic, with a few quick substitutions from the bench, the Rebels regained control, and pulled away. UNR never was knocked out, but with that said it was clear this was the Rebels' game.

Coach Olivier (pictured on right) and her staff can really get the team to respond, and adjust through out the game. This is a wonderful improvement and something this program hasn't seen that much in the past. The Rebels are no long just a one look team, they are showing different attacks and defence. It clear that a specific plan is formulated for each opponent.

The first half was close and a bit rocky with 2 ties and 8 lead changes. UNR lead for a good part of this half, but at halftime it was UNLV with a small 3 point lead.

Insead of being cold and having trouble getting into the second half like in the first two games; The Rebels were a house a fire, with a 18-2 run. This was yet another sign of the range of adjustments this team can make.

This again was a team effort, we are starting to see more players in the mix on the court, boxscores, and in the headlines. The seniors have step up to show the proper leadership. Shannon Oberg and Brittany Halberg are playing inspired basketball. Both are very real threats with the 3 point shot as well.

Shamela Hampton got her second double - double with 16 points and 10 rebounds. Shamela was a physical force as well; one UNR seemed to have no answer for.

There will be some tough tests ahead for the Rebels, But I'm starting to have real expectations that a run for the Mountain West Conference Title, or Tournament championship is real for this year.

What a story that would be, from last to champions in just one season.

After the game, we hung around the Cox Pavilion waiting for the player to return from NCAA Cool down period and any media. It is always great to congradulate, hug, and talk to the players and coaches.

Brittany Halberg's family was in town, and at the game. I have gotten to know her mom some over the years. My children really look up to Brittany, and always have since she first arrived at UNLV. She is a family favorite, and I guess for steve as well. Mrs. Halberg took the two shots that are below, of my family and Brittany as well as Steven and Brittany.




One thing I really love Women's Basketball, and the UNLV program is the amount of access the fans have. We are very much like a big extended family.

Over the years as a season ticket holder, I gotten to know the players. This year I got front row seats. I'm starting to know the families more now. I have a open invitation to watch practices, and the new coach already has a nickname for me after just a few games, trouble =)

Now ,I'm not saying that I'm special in anyway. I believe any fan has the opportunity to do any of the above. The difference is I take advantage of it.

Game day is a process that start hours before,and much planning based on the tip-off time. Steven and I like to arrive about 45 -30 minutes before the start of the game to watch warm ups. It about 35 -45 minutes drive from Steven home to the arena. It about 20 minutes from my place to Steven's. it takes about 15 minutes to get my daughter in UNLV cheerleading outfit, and hair done. My son about 10 minutes to get in Rebel gear, and about 1o for myself as well. Showers for all us is roughly an hour. As I said it can be a real process.

This game had a 7pm start time. Here at my place, we started at about 3pm getting ready. Although I'm not on the court, I do see myself as part of the Lady Rebels Team.

My Son's 7th birthday

Despite some early run ins with Murphy's law, the day was a success. My son had a great day and birthday!

It is hard for me to really believe he is 7 years old. Its seems like just yesterday, I was driving extremely slow taking him home from the hospital for the first time.

He is on track break at the moment, but is attending 1st grade. He growing so much each day, I'm so proud of him. he trys his best to handle what has been thrown at him at such a young age.

We had his birthday dinner at CiCi's Pizza Buffet. (see picture at left) it one of his favorite place to eat. They have all you can eat salad, soup, pasta, pizza, and desserts. It is not gourmet, but for the price, it's a deal.

My children like most, love pizza. I also think part of the appeal is that on the TVs they have cartoon network, and Fox News Channel. Clearly the people running it are big into fantasy. While the TVs are on closed caption, Classic 80's hits play over the speaker, the music is something I enjoy.

We head home after the meal for presents and cake !

My son's aunt and uncle from Florida gave him a Leapster L-Max, and a Wall -e game to play on it. Grandpa Johnson had the hit of the evening, with a set of 5 Transformers. I gave him a Jeff Gordon car, a Transformer, and a Tonka Car Carrier with 3 cars. His sister gave him a few little Transformers. Other family members have sent or will be sending something soon.

A few family members called through out the day. My son also asked if he could call a few people as well.

My son picked out and got a Midnight Delight cake by Stone Cold Creamery. It is devil's food cake with layers of chocolate ice cream, with rich fudge gouache over it. it was so very good. He really loved it. There be enough for a few more desserts out of it.

Even with my son growing up so fast, tonight he still wanted a hug and so cuddle time with his dad. it was a quiet and special moment to end the day

The Rebelution Is On!!

Even when you are sick or not feeling your best, a afternoon of Basketball can be a refreshing experience. The only thing better then just one game is a Woman's and Men's doubleheader at the Thomas and Mack Center. Today was such a case.

Tickets to the Lady Rebels game were good for a balcony seat for the later Runnin' Rebels game.

The Lady Rebels (pictured on right) won their only game this season on Tarkanian Court, beating Southern Utah 71-58.

The Lady Rebels got lucky on this one! More so then the final scored shows. They have work to do before facing UNR on Friday, the 3rd of a 5 game home stand.

They started the game with a 19 - 2 run. At onetime The Lady Rebels even had a 31 point advantage as well.

The 3 biggest areas for improvement are 1) was committing fouls, 2) not boxing out or getting the rebound, and 3) relying on the three -point shot to much.

Southern Utah made most of it points off of second or third chance shots.

When in the Thomas and Mack Center my seats are about 15 feet away for the Rebels' bench, so I well aware that the Coaching Staff was seeing the same things. Coach Olivier is very vocal.

My Children have always love cheerleaders. My daughter wants to be one, like her mom. This is not a passing phase as she wanted this almost as long as she could express herself. My son is starting to notice and admire beauty. In between games, I was able to get a picture with my children and the UNLV Cheerleaders.





The UNLV Men's Basketball Team is known as the Runnin' Rebels. They are the two time defending Mountain West Conference Tournament Champions.

The men started off slow, but once they got warmed up and the crowd into it they never really looked back. The Runnin' Rebels beat Texas - Pan American, 73 -48.

During the first half of this game their seemed to be many ties, and lead changes. I'm not sure exactly how many in total.

My Friend who attends games with me, Steven, is handicapped. So we didn't watch the game from the balcony. Instead, after the start of the game, we found a spot in the special handicapped sections off the main concourse.

Steven treated me to one of the best Taco Salad I have ever had, and a Diet Pepsi for dinner. I got a Kid's meal for my children. This is a Rebel Dog, Small Popcorn, and small soda.

It was a Great Evening !!

Splenda Recipes

One of my readers let me know they really like the recipes I had posted earlier, so I thought I would post some more.

I have picked up many cookbooks, magazines, and little pamphlets full of recipes over the years.

The Local paper, The Las Vegas Review-Journal also runs recipes on a theme every Wednesday in their Taste section.

I'm a diabetic, so I need to watch the amount of sugar I take in or that my body may produce naturally. I have to test my blood sugars, and take insulin regularly.

Splenda is a sweetener that won't raise your blood sugar levels. It's also sugar based, so you don't have the harsh after taste, or bitterness of equal or sweet & low. So the following are all recipes that use some form of Splenda

Chocolate and Vanilla Sugar Cookies (pictured above)
Prep. Time: 27 Minutes
Cook Time: 8 Minutes

3 (1 ounce) squares Semisweet Chocolate
1 Cup Unsalted Butter, softened
1 Cup SPLENDA Sugar Blend
2 Large Eggs
2 Teaspoons Vanilla Extract
4 Cups All-purpose Flour
1 Teaspoon Baking Powder
1/4 Teaspoon Salt

1) Beat butter at medium speed with an electric mixer in a large mixing bowl until creamy. Gradually add SPLENDA® Sugar Blend, beating well. Add eggs, one at a time, mixing well after each addition. Stir in vanilla.
2) Melt chocolate in a 1- cup glass measuring cup at HIGH in a microwave oven for 1 to 1 1/2 minutes or until melted, stirring twice. Set aside.
3) Combine flour, baking powder, and salt in a separate mixing bowl. Gradually add flour mixture to SPLENDA Sugar Blend mixture, beating until blended. Do not over beat. Divide dough into half. Stir melted chocolate into half of mixture.
4) Place dough on a lightly floured work surface.
5) For Checker Board Cookies, shape chocolate dough into 2 rectangular logs approximately 1-inch in diameter. Repeat procedure with vanilla dough. Cut each log lengthwise into quarters. Reassemble logs, alternating chocolate and vanilla to form a checkerboard pattern. Proceed as directed below.
5a) For Pinwheel Cookies, roll chocolate dough into 2 (8- x 9- inch) rectangles. Roll vanilla dough into 2 (8- x 10-inch rectangles) Place the vanilla layer on bottom so that it extends 1 inch beyond the chocolate layer; roll as for a jellyroll. Proceed as directed below.
5b) For Striped Cookies, divide each flavor into 3 balls. Roll each ball into a 7 1/2- x 3-inch rectangle; cut each rectangle into 5 (1 1/2- x 3-inch strips). Stack 5 strips alternating chocolate and vanilla. Proceed as directed below.
6) Wrap logs in plastic wrap and chill cookie dough for one hour or until slightly firm. (Dough can be frozen up to three months at this point).
7) Preheat oven to 350 degrees F. Lightly grease cookie sheets.
8) Remove dough from refrigerator. Slice cookies 1/4-inch thick and place on prepared cookie sheets.
9) Bake 8 to 10 minutes or until edges of cookies are lightly browned. Cool slightly on cookie sheets; remove to wire racks to cool completely
Makes: 36 cookies


After-School Butterscotch Brownies
Prep Time: 10 Minutes
Cook Time: 30 Minutes

2 1/4 Cups All-purpose Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Cup Butter or Margarine, softened
3/4 Cup packed SPLENDA Brown Sugar Blend
1 Tablespoon Vanilla Extract
2 Large Eggs
1 (11 ounce) package Butterscotch Flavored Morsels, divided
1/2 cup chopped Pecans

1) Preheat oven to 350 degrees F.
2) Combine flour, baking powder and salt in medium bowl; set aside.
3) Combine butter, SPLENDA Brown Sugar Blend and vanilla in a large mixer bowl; beat at medium speed until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in 1 cup of the morsels and the nuts. Spread into an ungreased 13 x 9-inch baking pan. Sprinkle with remaining 2/3 cup morsels.
4) Bake 30 to 40 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack. Cut into bars.
Makes: 48 bars


Old Fashioned Peanut Butter Chocolate Chip Cookies
Prep. Time: 10 Minutes
Cook Time: 10 Minutes

1 1/2 Cups All-purpose Flour
1 Teaspoon Baking Soda
1 Cup Butter or Margarine, softened
1/2 Cup Creamy or Chunky Peanut Butter
1/2 Cup SPLENDA Sugar Blend
1/2 Cup packed SPLENDA Brown Sugar Blend
1 Teaspoon Vanilla Extract
1 Large Egg
1 1/3 Cups Peanut Butter & Milk Chocolate Morsels

1) Preheat oven to 375 F.
2) Combine flour and baking soda in small bowl. Set aside.
3) Beat butter, peanut butter, SPLENDA Sugar Blend for Baking, SPLENDA Brown Sugar Blend and vanilla extract in large bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels.
4) Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly with bottom of glass dipped in SPLENDA Sugar Blend for Baking.
5) Bake for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes. Remove to wire racks to cool completely.
Makes: 36 cookies

Jimmie Johnson - Nascar's 3-Time Champion


On Sunday, Hendrick Motorsport's driver, Jimmie Johnson won his 3rd straight Sprint Cup Championship. The Sprint Cup is given to Nascar's Point Champion at the end of each season.

Johnson won the title by finishing in 15th place that the season ending Ford 400 at Homestead - Miami Speedway.

Jimmie Johnson joins one of his car owners, Jeff Gordon, as well as Richard Petty, Dale Earnhardt, Cale Yarborough, Lee Petty, Darrell Waltrip, and David Pearson as the only drivers in Nascar's history to reach this level.

In his seven full seasons as a driver, Johnson has 40 career victories, 101 Top-5s and 156 Top-10s. A very impressive record for someone who still growing as a driver. Among all the numbers are a Daytona 500 win, two wins at the Brickyard and a record four-race streak of wins at Lowe's Motor Speedway.

Jeff Gordon, who finished the year winless for the first time since his 1993 rookie season. The four-time series champion didn't let his own struggles dampen his Hendrick teammate's celebration, as Gordon walked to the victory stage to offer his congratulations. Plus it must help a little bit that Gordon has some of the car ownership money coming as well.

Both these great drivers who have redefine Nascar racing will be back on the track for the 2009 season, and the Daytona 500 in Feburary.

But before that champion Jimmie Johnson and the rest of the top 1o season finishers will be heading to Nascar's Award Night in New York City.

A Magickal First Class - Element of Air

Tonight was the first in the series of classes being offered by The Pagan and Witches Community Circle and the meetup.com site.

The Topic of this class was the Element of Air.

The teacher was the group Priestess, Lily. As always she did a wonderful job of teaching and explaining everything so all could understand. I love Lily's style of going over it, and then practicing the new skills. This is clearly one of her talents and gifts from the Goddess.

We covered the following:

Making a feather smudger
Smudging techniques
Quarter Calling

We covered a lots of information about air, and I'm very thankful for the handout, so I can review and use it as a guide. Learning about the symbol, mudra, pentacle location, rulership, and tarot suit were just some of the things I took away from this section of the class.

I'm not as crafty as I thought I was. I had no problem designing my feather smudger with colors that appeal to me. I picked blue, white, and black, with blue ribbon, and blue, white, and black beads. Now putting together, and having it stay was another issue all together. With the help of Lily, and other members it come out very nice. (see picture below)

I found out I really like and enjoy smudging. I've always been a big fan of incense. I burn it allot in my home, for mundane or spiritual purposes. I really got into this section of the class, and the proper techniques involved. I hope I have a change to do smudging at a Sunday Service or Sabbat.

We also went over Calling Quarters. I hope to be able to do this at some point in the future. To me, I haven't found the right voice yet. It is not the loud authoritative voice of a parent, but it also not the soft somber voice as well. It is somewhere in the middle. Til I find it, I will watch, and listen as others do the calling of the quarters.

Our homework is to write a Quarter Call based on what we learn or know about Air. No has to see it, but just have to write it down.

I had a really good time, learned much, and can't wait til class again next month.

Trying to Take the High Road

Most people have morals, values, ethics, and ideals that guide them through life. This core along with environment help form the person. We offen agree or disagree person to person on what specifically falls under these banners.

It easy to get on a soap box when things are great, and easy. It harder to fight what is perceived as correct, or popular. To stand for what you believe and hold dear while others question and challenge you is one of the real tests of life.

But what happens when there is an internal debate on two principals you hold? It creates much confusion. This is the state I do find myself in at moment. How do I find a balance between protecting my children, and nurturing as well as maintaining some form of contact with their mother, my ex -wife.

Now, I'm not here to bash Christy, my ex-wife. I don't hate her, and on some level will always care about her. She is the mother of my children. We pray always that Christy is safe and doing well.

That said, the divorce is still a very sore subject for me in many ways. I'm continuing to work through the hurt and betrayal I feel about the whole process.

What complicates this even more is that up until about a month ago, when Christy showed up at her mother's home in Utah, there had been a period of 10 months of no contact with us or her own family.

On the other side of this, as person who was adopted as a child, I value the contact and the clearly defined relationship I hold with my birth mother. It great to know she is alive, and what she up too. I would want my children to have some form of contact and relationship with their mother as well.

My parents didn't fight me on reconnecting with my birth parents. They let me find and spend sometime with them. On my own, I found about them and what they are like. I'm sure on some level was a bit hurtful for my parents. I think, they also knew that it was something I needed to do, and experience myself. I can tell you I grew from the experience.

As much as I can, I really would like to follow the model of my parents. That said, the safety and well being of the children needs to be the first priority.

What is being discussed at the moment is letting Christy call twice a week. Also that she could send letters, cards, and packages as well. I also get the feeling she like some visitation time of some sort if I was to make a trip to Utah.

Also as part of these talks some kind of co-parenting agreement would exist were Christy could talk to children on an issue or problem. Also work with me to find answers and resolve the issue or problem. Christy want to spread her wisdom and help teach the children.

I have yet to talk with Christy directly, instead communicating through her mother. This a caused a bit of a information bottleneck. It has also let to the feeling that this reconnection process is dragging on.

Know matter what the final deal says or even if we can reach one; This process needs to be slow and carefully managed. No one involved wants the children to suffer anymore. The goals and expectations of all need to be clearly stated and understood.

This is not without some major risks for me. Right now, under Nevada law, the children have been abandoned. This means if I wanted to I could take action through the courts. This not a course of action I'm considering at this time.

Contact also opens me up for possible custody challenges, and other legal battles in the future. That could get expensive as it would involve both the States of Nevada, and Utah.

Reasonable or not these are fears of mine.

When pondering all of this I go back and forth, just like in the entry itself.

Coach Olivier Leads in the Return of Rebel Pride

UNLV Lady Rebels Head Coach, Kathy Olivier, (pictured on right with me) had a near perfect debut last night. As her Rebels soundly beat Sacramento State 92-71. The team also scored 90 or more points in a game for the first time since Jan 2, 2005.

Brittany Halberg hit six 3-point shoots on the way to 22 total points. Shamela Hampton has a double - double with 18 points and 12 rebounds.

This was also a total team effort, with the bench coming and giving the starters rest. The bench expanded the lead, and helped at key moments during the game.

If anything needs some work coming out of this game, its not missing free throws shots, and not coming out cold for the first few minutes of the second half. That said, the Rebels never trailed in this game. The couching staff's plan of attack work very well.

This really was a new era for Lady Rebel Basketball as 1,046 fans were in the Cox Pavilion. My hope is the retention rate is high for the rest of the season. I did my part as I brought my friend, Steven, as a new season ticket holder himself this year. This is my family's 5 year as a season ticket holder.

It was super to see the bond and support of UNLV's Woman Sports programs, as members from Volleyball, Soccer, Swimming, and Softball Teams were in attendance. The Rebel Cheerleaders and The Rebel Girls Dance Team were performing or in the stands.

UNLV Softball is another sport in which I'm a season ticket holder. There season will start on February 6th. It was nice to see team members Marissa Nichols, Kendall Fearn, and Traci Odegard among others. (Traci, my children and I pictured below)

After the game, I attended a social with other season ticket holders, player's parents, former and current players, and the couching staff. It was a great fun for my children and I to see everyone. I was excited to see Samantha Stickerler again, who left the team mid season last year after the loss of her father. I wish her nothing but the best in the future.

Couch Olivier joked with Steven and I that she could tell we are going to be trouble. She really has no idea. Steven and I will be dropping in on practices as well, attending games, and other events all season long.

I'm very much a New England style of fan. We take great interest and pride in the teams we follow. We are the extremely loyal. We are first ones to lavish praise for a job well done. We are also the first to speak up when thing are not good or need improvement. I grew up with Red Sox, Bruins, Celtics, and Patriots. I know great joy and equally great heart ache.

I truly believe as I told Coach Olivier, that she is a breath of fresh air to this program. She and her staff have the team working harder then ever. They also have The Lady Rebels enjoying playing the game and being a team. That can only be a winning combination.

It was a great and exciting night out for my children and I. We really enjoy ourselves! We are all looking forward to Tuesday night. The Lady Rebels take on Southern Utah at the Thomas and Mack Center as the first part of a double header with the Runnin' Rebels, Men's Basketball program.

On the way to bring Steven home, we stop at a 24 -hours Dunkin' Donuts and had a treat. It was a special way to cap off the event.

After dropping my friend, and heading back to my complex, I got a nice reward. Two children fast asleep in their car seats. I hated to do it, but woke them up for the short walk from the parking spot. They got their shoes off and were almost immediately fast asleep again. Dreaming no doubt of one day being a Rebel themselves.

A perfect ending, to a perfect night out!

UNLV Lady Rebels - A New Era Begins

Last Spring, this Woman's basketball program was in ruin. As I sat watching the 1st round of the Mountain West Conference Championships at the Thomas and Mack Center, I saw them give up on themselves and their coach. It was heartbreaking. There was sadness and tears as the players walk up the tunnel ramp. There were some players that skip it all together, choosing to leave another way.

It didn't take long for the firings to start, just about a week after that horrible loss, the whole staff was gutted, except Elizabeth Linkous. After what seemed like a long search, former Rebel, and UCLA Head Coach, Kathy Olivier, was hired.

Couch Olivier in a letter to season tickets holders list some of the improvements already made as team lounge renovations, new flooring in the women's basketball suite of offices, upgrating to team locker room, and new plasma televisions in the offices, team lounge, and locker room.

Tonight, a new era and season will start for the UNLV Rebels at the Cox Pavilion vs Sacramento State Hornets. Tip -off is expected around 7pm PST.

My Children's favorite player, #5 Brittany Halberg (pictured above), and four other Seniors are among the returning players.

Earlier this month, I was at the ticket office to pick up my tickets, and I had a chance to sit in on a practice. My children were there as well. What I saw was great! The players were working hard to learn a new system, but also enjoying themselves as well. There seemed to be a wonderful chemistry between the players and the couching staff.

UNLV is part of The Mountain West Conference, which also home to nationally ranked BYU, and Utah. We shall see how this all plays out on the hardwood courts.

Dusty, You'll Be Missed

On Saturday, November 8th, while I was out with some friends, our cat, Dusty got out. He has yet to return.

We have searched the complex were we live most nights, calling his name. We also have left some food and water out for him, which as not been touched.

He is a young un-neutered male, so he may be sowing his seeds on the concrete desert of Las Vegas.

There is still a chance Dusty might return. That said, with each passing day the chances get less and less.

Dusty came to join our family in May. He was a gift from Lily, and her family. I brought him home here after the Beltane ritual & feast.

He was loved and care for by my children and I. He will surly be missed.

He loved to curl up in the sink, even though most cats by nature don't like getting wet. Dusty was always cuddling into and sleeping with one of us.

Our time together was short, but you will never be forgotten.

May the Goddess watch over and protect you on your journey.

NBA Champs Hold On; Ground Atlanta Hawks for First Lost of Season

Sometimes it better to be lucky then talented. My guess is that in the game of Basketball the right mixture of both can have your team going a long way

The 2008 NBA World Champions, Boston Celtics, came up with another magical moment in it rich history last night. With time all but gone, scored the game winning basket, to break the Atlanta Hawk's 6 game undefeated streak to start the new NBA season.

"The Atlanta Hawks have improved since losing to the Celtics in the first round
of the playoffs last spring. Too bad for them that the defending champions
haven't changed much at all. NBA finals MVP Paul Pierce hit a fall away jumper
with 0.5 seconds left to give Boston a 103-102 victory over Atlanta on Wednesday
night, handing the Hawks their first loss of the season and their first since
the Celtics ousted them en route to their unprecedented 17th title."

The NBA season is still young, much basketball to be played. Many more exciting moments will unfold before our eyes.

We'll have to see what the winter brings, and who is in the playoff in April. Which teams have a real shot at the 2009 NBA Title. I have a strong feeling, that Boston and the big three will be int he middle of that fight.

I love to see my beloved Celtics win Back to Back Championship, but we'll have to see how it all unfolds

Veteran's Day: Honoring All Who Served

Most days I'm very Political. I have strong feeling and view. I express them openly. Today is different though.

Today is Special, it a day were all Americans take a moment to pause, reflex, and honor the men and woman who have served in the Military, and especially the troops who gave their lives.

This day is so important that there is no school, no mail, no government services other then police, fire, and medical.

I fully understand why it is this way. I understand the sacrifice they made, so I can be free, and have the right to agree or disagree with my government, that I may express myself, and all the rights granted me under the Constitution of the United States. I shall never forget, and never be ungrateful.

I never served in the Military myself, but I have connections to it.

My grandfather, George Wheeler, served in the Navy during World War II. He was in the south pacific, fighting Japan. He served on the USS Wasp, and was on it during it sinking. He lived. I'm not sure how he served his remaining time in the Navy.

I have a Uncle, Jim Atwood, who served in the Navy as well. He was on a submarine most of the time. He served during the Vietnam era

My cousin, Beckie, married a serviceman, Chris Merrill. He has done a few tours in Iraq, but is back in America now. I attend there wedding, but have not stayed in contact.

My ex -wife, Christy Johnson, grandfather also served in the Navy during World War II

Christy's father, Steven Johnson, served in Vietnam, and Korea. He also guarded one of Hitler's top lieutenants in a prison in Berlin, Germany.

During my teen's and early 20's, I live in Norwich, Connecticut. Norwich is within New London County. This county is also home to Submarine Base -Groton, and US Coast Guard Academy.

On the Northeast corner of Las Vegas is Nellis Air Force Base.

About an hour north of Las Vegas, is the most nuked and bombed land in the world. It is the Nevada Test Site and Nellis Range. Here the Armed Services practice desert warfare, much like the tactics being used in Iraq and Afghanistan. Nuclear bomb testing went on there regularly till banned by treaty and executive order in the 1990's, or so we been told. Nevada Test Site is also home to Area 51, a base so secret that the government sill to this day it refuses to confirm or even acknowledge it existence.

Many of my family lines in genealogy go through the wars that has shaped us a nation. It seems not matter if it was birth, adoptive, or family I married in too.

We as a nation, and individuals, owe a debt that can never be repayed to the Men and Women of all branches of the United States Military. It doesn't matter if they were drafted or volunteered. They answered the call to duty.

I support the members of the United States Military station around the globe, and those of our partner nations. May the all come home alive and safe very soon.

As you go about you routine today, please take a moment of silent relaxation. If you have child(ren), please explain why this day is special.

And remember these two simple but moving slogans, 1) Freedom is not free, and 2) All gave some, and some gave all.

Pagan and Witches Community Circle

As a Pagan Witch, I just don't go down to the local church, to learn and worship

Some Pagans choose to practice solitary and some prefer a circle, or coven. I do a mixture, but really enjoy the social aspect of a circle or coven. I also learn best by seeing and doing, more then just reading it in a book.

Here in the greater Las Vegas area, there is a rather large Pagan Community. Many great groups to pick from and join, one or all of them. I'm a member of the Las Vegas Pagan and Witches Community Circle.

This group has gone through a few names, but was founded in October 2002, online at MeetUp.com. We still use the Meetup system, but as a group we grown and expanded beyond just the site.

I joined in March of this year, but didn't go to my first event, Beltane, til May 1st. Lily is the leader,and High Priestess of the group. Lily is a wonderful person, so easy to talk with, and learn from. Through my experiences, I have come to trust Lily to guide my spiritual growth, or any part of my magickal or mundane life.

Here is what Lily wrote as a description of the group, "This is a place for pagans, witches and other like-minded individuals of all paths to gather together to worship, fellowship, network and celebrate our spirituality and diversity in perfect love and perfect trust. We welcome all, wherever you may be on your journey, whether seeking, experienced or somewhere in between. We honor the Lord and the Lady, the Divine within and without, and celebrate each turning of the wheel. Come join our circle of friends."

I'm one of the somewhere in the middle people. I have most of the basics down, but still much to learn, maybe more then just this life time. I try and be as helpful as I can, setting up, taking down, and running for ice, firewood, or anything that might be needed. I also try to bring interesting and different foods for the pot lucks. Many in the group are vegetarians, so I try to mix it up so that everyone has something they can have and enjoy.

The above picture is of Lily and I at Samhain. Lily is many things to me: A close friend, spiritual leader, mother, teacher, medical advisor, and therapist. We have had many long, deep conversations well into the morning hours after a event. I have grown and learned from each one.

My mother has talked to Lily on the phone, and just love her. I don't need it, but nice to have my parents blessing, and know they think I'm in the right place. Both my parents have shown an interest in my faith, and wanting to learn more about it.

We, as The Las Vegas Pagan and Witches Community Circle, have recently opened an online store. 40 Mistakes Men Make While Having Sex With A Woman

A Loving Message from a Fundamentalist Christian

I have a lot of political and activist friends from all over the country. As in any community we sent things of interest to each other. But when I was sent the following, I just couldn't believe it, I had to share it. I have never seen such open hate, bigotry, and racism.

" I got to wake up this morning to the first, HALF black president. Which as we all know is history in the making. And yay for all those racist, idiots who voted for the man because he's black! It just goes to show that this ONCE Great Country is full of people who cannot think for them selves. Never in my 28 years have I EVER felt so ashamed and disgusted to be apart of this country. I get bashed because I'm a republican, and because I did vote for Bush. I agree that the war went on long enough, and we should have pulled our troops a long time ago, but that isn't what happened. McCain got slaughtered because of people hating Bush, and because people these days are so desperate for something different, they forgot their God, they forgot the mind, they played into ignorance and voted. And for me, its not that he is HALF black....that is a point that didn't bother me at all. What bothers me is he is for partial birth abortions, he wants to teach sex-ed to my kindergartener, he
wants tore-vamp the national anthem, and change the flag because it represents
the very things that people fought for 100's of years ago! To be free! That is
what the constitution was written for, and its a damn good constitution if you
ask me. Nothing needs to be changed, it all needs to be redirected to what
started it all! People are cheering, people are crying, black churchs across
America we jumping for joy when Obama was annouced to be the 44th president! Any REAL, God fearing, Bible believing Christian in his right mind should have seen
through his BS....but no! We voted for someone with little to no experience all
because he's black! Way to go America! You're a bunch of effin' fools! So, who
care if the babies be murdered, or the Bibles burn, or if people get paid to sit
on their already lazy asses, or the family units be changed to whatever we
think, and while the Ax of this liar falls, we'll forever rememeber that he was
voted in because he is HALF black. Spread the WEALTH! God help us
all!"

Here are some points:

1) I'm a strong believer in the Constitution of the United States, and the First Amendment right to free speech. I also believe that everyone has a right to express their views, no matter if I agree or not . That all said, this rant clearly come very close to hate speech, something that is morally wrong, and not cover by the first amendment. In, fact it can lead to criminal and civil penalties.

2) I'm not a Christian, nor claim to be one. I'm a Pagan Witch, and very happy in my faith and spiritual life. That said, my parents are an Episcopal Minster, and a Methodist Deacon. They and other true follower of Christ would be very embarrassed by your rant. This will not bring anyone to him, you fail to be a fisher of men (or women).

3) Jesus taught to that people that they should love one and another as he loved us. He also said, that when you do unto the lest of thee, you do unto me. Jesus hung with and around the most hated outcast of his time.

4) Jesus was a Community Organizer, and Pilate was a Governor

5) You are extremely Pro- life, although I strongly disagree, you have a right to hold whatever view you want to on the issues facing the nation.

6) It's clear you get your information from The Faux (fox) News Network, or Oxycontin Radio

7) You seem to have little or no knowledge of the issues or policies put forth by the Obama / Biden Ticket, and the Democratic party

8) John McCain, the candidate you did support, would disavow this rant and you. I would suggest you go back and watch or read a transcript of his concession speech.

9) This was a historic day for America, not just African - Americans. It was a fulfillment of Martin Luther King, Jr's , I Have a Dream Speech. There is clearly more work to be done, but this was an important step forward for us as a country.

10) Another important thing to take away from this election is that more people were involved in the process then ever before, and that can't be a bad thing. Having a bigger, more informed amount of people lead to better and higher quality representation. I hope that everyone will stay involved and help shape policy. After it less then 2 year to the 2010 mid- term elections, and in shorter time then we'll like Obama / Biden will be up for re- election. This is just the first steps of a long journey.

Slow Cooker Recipes

With my lifestyle and committments, Crock-Pot or Slow Cooker is very nice. I can do some prep -work in the morning or the night before, put it together, and let it cook all day. When we are ready to eat in the evening we have a nice hot. home cooked meal

Here are some great recipes I have come across, hope you try and enjoy them!

Heavenly Harvest Pork Roast
Cook: High 6 to 8 Hours

1/4 Cup Pornegranate Juice
1/4 Cup Sugar
1 Tablespoon Garlic Salt
1 Tablespoon Steak Seasoning
1 Teaspoon Black Pepper
1 Pork Roast (4 to 5 pounds)
2 Pears, cored, peeled, and sliced thick
1/2 Orange with peel, sliced thick

1) Combine pornegranate juice and sugar in small saucepan. Cook over low heat, stirring until sugar dissolves, about 2 minutes. Pour into slow cooker.
2) Combine salt, garlic salt, steak seaoning, and pepper in a small mixing bowl. Rub mixture over roast. Place roast in slow cooker. Turn roast to cover with juice mixture.
3) Top roast with pear and orange slices. Cover; cook on HIGH 6 to 8 hours or until tender. Serve with juice and fruit slices.
Makes: 6 to 8 Servings


Forty - Clove Chicken
Cook: Low 6 Hours

1 Whole Chicken (about 3 pounds), cut up
Salt
Black Pepper
1 to 2 Tablespoons Olive Oil
1/4 Cup dry White Wine
2 Tablespoons chopped fresh Parsley or 2 Teaspoons dried Parsley Flakes
2 Tablespoons dry Vermouth
2 Teaspoons dried Basil
1 Teaspoon dried Oregano
Pinch Red Pepper Flakes
40 cloves Garlic (about 2 heads), Peeled^
4 Stalks Celery, sliced
Juice and Peel of 1 Lemon
Fresh Herbs
^ The whole garlic bulb is called a head.

1) Remove skin from chicken. Sprinkle chicken with salt and pepper. Heat oil in large skillet over medium heat. Add chicken; brown on all sides. Remove to platter.
2) Combine wine, parsley, vermouth, basil, oregano, and red pepper flakes in large bowl. Add garlic and celery; coat well. Transfer garlic and celery to slow cooker with slotted spoon. Add chicken to remaining herb mixture; coat well. Place chicken on top of celery mixture in slow cooker. Sprinkle lemon juice and peel over chicken. Cover; cook on LOW 6 hours.
3)Sprinkle wit fresh herbs before serving
Makes: 4 to 6 Servings


Classic Beef & Noodles
Cook: High 4 1/2 to 5 1/2 Hours - Low 8 1/2 to 10 1/2 Hours

1 Tablespoon Vegetable Oil
2 Pounds Beef Stew meat, sliced in half
1/4 Pound Mushrooms, sliced in half
2 Tablespoons chopped Onion
2 Cloves Garlic, minced
1 Teaspoon Salt
1 Teaspoon dried Oregano Leaves
1/2 Teaspoon Black Pepper
1/4 Teaspoon dried Marjoram Leaves
1 Bay Leaf
1 1/2 Cups Beef Broth
1/3 Cup dry Sherry
1 Cup (8 ounces) Sour Cream
1/2 Cup All-Purpose Flour
1/4 Cup Water
4 Cups hot cooked Noodles

1) Heat oil in large skillet. Brown beef on all sides. (work in batches, if necessary.) Drain and discard fat.
2) Combine beef, mushrooms, onion, garlic, salt, oregano, pepper. marjoram, and bay leaf in slow cooker. Pour in beef broth and sherry. Cover; cook on LOW 8 to 10 hours or High 4 to 5 hours. Remove and discard bay leaf.
3) Combine sour cream, flour and water in small bowl. Stir about 1 cup liquid from slow cooker into sour cream mixture. Add mixture to slow cookers. Cook, uncovered, on HIGH 30 minutes or until thickened and bubbly. Serve over noodles.
Makes: 8 Servings


That's Italian Meat Loaf
Cook: HIGH 4 to 6 hours - LOW 8 to 10 hours

1 Can (8 ounces) Tomato Sauce, divided
1 Egg, lightly beaten
1/2 Cup chopped Onion
1/2 Cup chopped Green Bell Pepper
1/3 Cup Seasoned dry Bread Crumbs
2 Tablespoons grated Parmesan Cheese
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Black Pepper
1 Pound Ground Beef
1/2 Pound Ground Pork
1 Cup (4 ounces) shredded Asiago Chesse

1) Reserve 1/3 cup tomato sauce; refrigerate. Combine remaining 2/3 cup tomato sauce and egg in large bowl. Stir in onion, bell pepper, bread crumbs, parmesan chesse, garlic powder, and black pepper. Add ground beef and pork; mix well and shape into loaf.
2) Place meat loaf on foil handles; place in slow cooker. Cover; cook on LOW 8 to 10 hours or HIGH 4 to 6 hours (internal temperature should read 170 F).
3) Spread meat loaf with reserved tomato sauce; sprinkle with asiago cheese. Cover; cook 15 minutes or untill chesse is melted. Using handles, remove meat loaf from slow cooker.
Makes: 8 servings

Foil Handles: To make foil handles, tear off 3 (18x3 inch) strips of heavy- duty foil. Crisscross the strips so they resemble the spokes of a wheel. Place the dish in center of the strips. Pull the foil strips up and over the dish and place into the slow cooker. Use foil handles to easily lift the item out again when it is finished cooking.
